Paint Chicago Red with California Strawberries (& Giveaway!)

I was recently invited to the “Paint Chicago Red with California Strawberries” event at The Chopping Block in Chicago. Who knew you could make so many different sweet, savory and alcoholic dishes with delicious strawberries? Strawberry Gazpacho, Strawberry and Goat Cheese Pizza (my FAV), Strawberry Shortcake Sliders and Strawberry Basil Balsamic Mojitos – oh, the yumminess. Anything with the title of “Strawberry Shortcake Slider” is just asking to be eaten first…right? …RIGHT?

While sampling ALL of the beautiful offerings, we were given plentiful information from nutritionist, David Grotto and George Chavez (California Strawberry Grower.)During their friendly question and answer period, I asked David, “Is there a nutritional difference between conventional strawberries and organically grown strawberries?” Though he seemed to advocate eating organic when physically and financially possible, he stated there have been studies done resulting in no concrete evidence that one berry is more nutritional than the other. In other words…organic or non-organic, just eat your antioxidant filled berries!

And because I know your mouth is still watering at the words, STRAWBERRY SHORTCAKE SLIDERS…here’s the recipe for you.

Strawberry Shortcake Sliders

Sliders are showing up in menus everywhere, but these strawberry shortcake sliders take the cake!

  1. 2 c. All-Purpose Flour
  2. 3 TB Sugar, divided
  3. 1 1/2 TB Baking Powder
  4. 1/2 t. Salt
  5. 8 TB Cold unsalted butter, cut into 1/2 inch pieces
  6. 2 1/4 c. Heavy cream, divided
  7. 6 c. Stemmed fresh California strawberries, divided
  8. 1 c. simple syrup
  9. 1 t. Vanilla
  10. Confectioner’s sugar
  11. Mint Chiffonade

  1. Sift flour, 2 TB sugar, baking powder and salt into a bowl. With a fork or pastry cutter, cut in butter to fine particles. Stir in 1 to 1 1/2 c. cream (enough so that dough holds together and is soft but not sticky.) On a floured surface, knead dough lightly a few times to form a ball. Pat into a 1/2 inch thick circle. Wrap in plastic wrap; refrigerate at least 15 minutes. Heat oven to 400 F. With a 2 inch round cutter, cut dough into 12 circles. Place on parchment lined baking sheet; bake 15-20 minutes or until golden.
  2. In a saucepan, simmer 4 c. strawberries with simple syrup until jam-like consistency; cool. Slice remaining berries. Whip 3/4 c. cream with vanilla and 1 TB sugar until soft peaks form.
  3. To serve, cut shortcakes in half horizontally. Place 3 shortcake bottoms on each of 4 plates. top with cooked strawberries, whipped cream and sliced strawberries, dividing ingredients evenly. Place tops on shortcakes; dust with confectioner’s sugar and sprinkle with mint.

*As you can tell, this is NOT a diet friendly recipe. Good thing I only ate ONE at the event. Also, simple syrup is made by boiling 1 c. of water with 1 c. of sugar and then letting to cool.

    My favorite way to eat strawberries is mash them up in a bowl, put sugar in it and let it sit in the fridge for a few hrs, take it our and put it over dessert cakes!

    I love eating them with honey! Wanna hear something funny, I talked my husband into going to pick strawberries with me, we got out in the field, got what we wanted, went to pay and had 20# in strawberries! $40 LOL So we have a freezer full right now.
