Move over pasta, quinoa is in town and he’s bringing his friends kale, avocado and fruit smoothie. Making their debut today (4/29/14), Corner Bakery’s healthy menu items are in the house! Recently, I had the delicious opportunity to attend a menu preview which included samples of the new menu items along with food demonstrations by Chef Ric Scicchitano, Senior Vice-President of Food and Beverage.

At Corner Bakery Cafe, you don’t’ have to sacrifice flavor to eat healthy,” said Chef Ric. “We’re making salads from scratch with our more than 40 different types of produce and blending all natural smoothies to order. Our guests are getting food that’s both good for them and delicious.” 

The gluten-friendly quinoa and pico salad features quinoa, corn, black beans, tomatoes, jalapenos, onions and cilantro in a zesty lime vinaigrette. Quinoa provides all nine essential amino acids, which means it’s a complete protein, is rich in calcium and iron, and high in fiber. Also new to Corner Bakery Cafe’s menu is a toasted Sesame Kale salad. The healthful addition features fresh kale, shredded carrots and toasted sesame seeds with ginger soy dressing.  A nutritional powerhouse, kale is low in calories, high in fiber, iron and calcium, and full of the antioxidants Vitamins A, C and K.

Returning to the menu is Southwest Avocado salad, featuring fresh avocado, roasted corn & tomato salsa and topped with tortilla strips. Guests can enjoy all the made-to-order salads on their own or as part of The Trio, a combination of three Homemade Specialty Salads or two salads and a cup of soup. With The Trio, guests can personally create their own meal with more than 5,000 combinations of hand-crafted salads and homemade soups. Don’t forget to wash it all down with an Orange Ginger Carrot or Four Berry 100% fruit and vegetable smoothie! Both smoothies deliver four daily servings of fruit, contain no added sugar, and can be enhanced with a yogurt protein boost that packs six grams of protein.

Personally, I’m happy to see a nationwide brand introduce healthier options for a quick breakfast and lunch. When you are on the go, it’s sometimes hard to find an option that fits into a healthy lifestyle.
