Did Someone Say Strawberry Goat Cheese Pizza?

A savory sweet flatbread enjoyable on any summer day!
Ingredients
  • Naan:
  • 1 c. Unbleached Flour
  • ¼ t. Baking Powder
  • ¼ t. Sea Salt
  • ½ c. Stonyfield Greek Yogurt
  • Toppings:
  • 1½ TB White Balsamic Vinegar
  • 1½ TB Extra Virgin Olive Oil
  • ⅛ c. Aged Balsamic Vinegar
  • 2 oz. Softened Goat Cheese
  • 2 c. Earthbound Farm Strawberries, hulled and quartered
  • Course Ground Black Pepper
  • Earthbound Farm Baby Arugula
Instructions
  1. Naan:Mix dry ingredients. Stir in yogurt until too stiff for spoon. Knead in bowl until it holds together. Turn dough out on floured surface and continue kneading for about 5 minutes until the dough feels smooth and elastic. (will go from shaggy, dry dough to smooth) Form dough into a ball and put in an oiled bowl, covered with a towel, to rest for an hour (or while you prepare the toppings.) Roll dough into an 8" circle. Place dough in a heated non-stick frying pan (or griddle) to brown the bottom. Place dough directly on oven rack under a broiler until it puffs up and browns on the top (watch carefully!!) Remove and place on baking sheet.
  2. Toppings:Make white balsamic vinaigrette: in small non-reactive saucepan, simmer white balsamic vinegar until reduced to about ¾ TB. Whish in extra virgin olive oil and set aside to cool.
  3. Make aged balsamic vinaigrette: in small non-reactive saucepan, simmer aged balsamic vinegar until reduce to about 2 t. Set aside to cool.
  4. Spread 1 oz. goat cheese on warm pizza crust, leaving ½" border. Toss strawberries with white balsamic vinaigrette; arrange strawberries evenly on goat cheese.
  5. Bake 10 minutes at 400 degrees. Remove from oven (if too much juice, blot carefully with paper towel.) Scatter pinches of remaining goat cheese on top. Drizzle with aged balsamic reduction; sprinkle with black pepper. Garnish with torn baby arugula.
Notes
**This recipe makes one 8" pizza...feel free to double, triple or quadruple.
